Banana Muffins with Crumb Topping
3 ripe bananas, mashed
1 ½ cups flour
¾ cup sugar
1/3 cup butter, melted and cooled
1 egg, beaten
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
1/3 cup brown sugar
2 Tablespoons flour
1 ½ Tablespoons butter
¼ teaspoon ground cinnamon
Get your muffin pan ready by adding muffin or cupcake liners to it. Preheat oven to 375 degrees.
In a bowl mix all topping ingredients into a crumble, nice clean hands work best for this, set aside.
In a bowl stir together flour, baking powder, baking soda and salt. Set aside. In a large bowl add mashed banana, vanilla extract, sugar, and melted butter. Using an electric hand mixer mix ingredients well starting on low.
Add flour mixture to wet mixture and mix until all ingredients are combined, scrape down and give the mixture a final mix.
Fill muffin cups evenly with the batter. Sprinkle with crumbs and bake for 18-22 minutes or until a toothpick comes out clean. Enjoy.
