apple and pecan crisp
Apple and Pecan Crumble
3 Red Delicious apples, washed, cored, peeled and sliced thinly
2 Sweet Tango apples, washed, cored, peeled and sliced thinly
1 cup chopped pecans
6 Tablespoons butter, cut into cubes, very cold
¾ cup sugar
½ cup brown sugar
½ cup quick 1 minute oats
¼ cup flour
2 teaspoons lemon juice
¼ teaspoon cinnamon
1/8 teaspoon salt
Preheat oven to 365 degrees Fahrenheit. Butter a 8x8 baking dish. Separate 1 Tablespoons of Brown Sugar and 2 Tablespoons of regular sugar into a small bowl and set aside reserving the rest of the sugars. Using a food processor add
Add the reserved sugars, flour, cinnamon and salt to food processor and mix until everything is combined. Add butter and pulse until a just crumbly. Don't over mix. Stir in the oats and pecans. This will be the topping.
In a large bowl add mix the lemon juice with the apple slices. Add the remaining sugar to the apples and mix well.
Spoon apple mixture into prepared baking dish and evenly sprinkle over topping. Bake for 45 - 55 minutes, or until the apples are soft and the topping toasted. Serve with ice cream, whipped cream is desired.
