Apple and Blueberry Pastries
Makes 18 Pastries Filling 1 medium apple, small dice ¼ cup fresh blueberries zest from ½ small orange 1 tablespoon sugar 1 tablespoon water ½ tablespoon cornstarch Also needed 1 two sheet package of puff pastry In a sauce pan add cornstarch and sugar, whisk. Add apples and blueberries and stir those in well. Turn on heat to just under medium. Cook and stir apple and blueberries mixture until apples begin to soften. Stir in zest and pour mixture into heat proof bowl until completely cooled. Preheat oven to 375 degrees Fahrenheit. Thaw pastry according to package directions. Have a little bowl with water ready. Unroll one sheet and using a pizza cutter or pasty dough cutter cut pastry into nine equal pieces. Add a little filling to the center of each pastry piece. Don't over fill. With your finger add a little water around three of the four sides. Fold pastry dough over filling and to the edge. With the prongs of a folk seal the pastry piece. Do this with all of them. Line a baking sheet with foil and place pastries onto baking sheet. Bake 15-17 minutes on center of rack. Remove to a cooling rack and let cool a few minutes. Drizzle icing on each pastry with a spoon. Enjoy. Orange Icing 1 cup of powdered sugar 3 Tablespoons orange juice ¼ teaspoon vanilla extract Orange Icing Add all ingredients to a bowl and whisk until smooth. Peace, CK |
